Molly's Sisters birthday cake.

Good evening readers,
 Miss Molly has a big sister called Sian (her daddy & his wife don't ask that's another story lol) and it is her birthday the day after my sisters and as i had baked her cake with Sophie yesterday Molly wanted to make her sister one too so yet again for the second time this week we set to work,Sian is a goth and loves dark colours and is also a lover of them cheeky yellow minions so based on that we decided blue,green and purple with black icing was the way forward here is how we did it




 I then used disposable piping bags and then did spirals again.

 I then popped it in the oven on 190 for 35 Min's until cooked through.

Covered in jam.
I then sliced it open and sandwiched it back together with black butter icing and raspberry jam and then coated the whole thing with melted seedless jam then covered it in white royal icing.
Icing rolled.

Got it covered,

Sadly the topper broke :(

And with the remainder of the cake mix we made some cup cakes as you can see they were very colourful,
Sian loved her cake and said it was the best one she ever had.
this cake only took 4 hours to make and even tho the topper broke i still think it looked good,The topper was from Country kitchen cakes on facebook for £4 so the total for this cake was just under £10 to make.

How to make Chicken Crumble feeds 4 for under £3.00!

Good Evening readers.

Hope you are well.I have had such busy weekend and didn't have time to cook a roast dinner and so rustled up the kids favourite Chicken Crumble (nothing like apple crumble i promise!) 
It only takes 10 Min's to make and 15 Min's to cook,so very quick and simple and also filling and low in fat what more can you ask for...


So how do you make it i hear you ask well its very simple just get 
1bag of sliced ready cooked chicken (frozen or fresh) ((you could also use left over chicken from the Sunday dinner))
300ml ready made gravy.(leave to cool right down)
2 packets of stuffing mix made up as instructed and left to cool down too.
1cup of fresh breadcrumbs(blitz up the bread ends)
Added extras can be 1 cup of frozen peas,10button mushrooms or 1cup of sweetcorn (or all of them if you are hungry)





Now mix the chicken to the gravy and add any extras then stir well,

Next up you pour it into a baking dish,
Now add the bread crumbs to the stuffing mix and mix well.
Using your fingers break up the stuffing mix and place over the chicken until all the chicken is covered (don't press down)



now bake it on 180c for 10min's until crispy on top.


Serve with mash or chips and peas and lashings of gravy then enjoy,We had ours in a Yorkshire pudding yummy.

Home Made Spotted Dick.

Good Afternoon Readers.


I do hope you are all well and keeping warm,
What a day all four seasons in one so i decided to make a yummy Spotted dick it is so easy to make and in less than 30 minutes to prepare.


 To make this yummy pudding you will need..

300g Plain flour
2TSP
Juice of one lemon or 15ml  jiffy
200ml milk
150g Suet


100g currants

75g Caster sugar



 So that is 75g caster sugar,
100g currants,
300g plain flour (sieved)
150g suet (i use a veg one)
juice of one lemon,
2tsp baking powder,
200ml whole milk.

So mix the dry ingredients with the milk until well mixed.
Add milk.
Mix dry to wet.

Grease basin with butter.
Level with a spoon.
 Then Grease a pudding basin and then spoon in the mix,Next cut some greaseproof paper to size remembering to fold in the middle so it can expand,Now place that on top  of the mix and seal the lid in place,If you don't have a basin like mine then use a clean tea towel and tie in place with string.
Now place the pudding basin in to a large saucepan and fill it 2/3rds of the way up then pop the lid on and simmer for 90 minutes.Making sure the pan don't dry out!
Don't forget the fold
Lid on.



All cooked and soo yummy.

 Once cooked leave to cool for 10 minutes before slicing and serving with custard or if like me you like a crunchy out side pop it in the oven for 5/10 minutes,MM Yummy. 

Crunchy on the outside yet soft &fluffy inside.




And so there it is home made spotted dick pudding,

Christian's Pork meatballs with tomato sauce.

Good morning readers. 

For last nights tea my son Christian wanted to make tea for us and choose pork meatballs. it tasted fantastic so i shall be getting him to cook more ready for when he moves out.Im sure you will agree they taste amazing once you have tried them too.

Getting it ready.
He started by chopping the onion (poor thing was crying)
Then we got a pack of part baked baguettes and bashed then in the pack until they were breadcrumbs (freeze any left over)
then added the onion breadcrumbs and one egg a pinch of salt and pepper.






Next he squished and squashed it  until well mixed.




Then he rolled them into balls and left to one side until all the meat mix has been used.



Then in a hot pan he sealed them in batches and then put into a baking tray to keep warm.

 In the same pan fry some mushrooms with a pinch of salt n pepper then added the tin of cherry tomato's 



Next he used a masher to squish the tomato's  then added tomato paste,chopped tomato's garlic and herbs bring to the boil then add a teaspoon of sugar,Pour the tomato mix  over the meatballs and pop in the oven for 10 mins until cooked through.Serve with pasta and cheese,Yummy.


And there you have it.Christians meatballs n pasta.
