Molly's Sisters birthday cake.

Good evening readers,
 Miss Molly has a big sister called Sian (her daddy & his wife don't ask that's another story lol) and it is her birthday the day after my sisters and as i had baked her cake with Sophie yesterday Molly wanted to make her sister one too so yet again for the second time this week we set to work,Sian is a goth and loves dark colours and is also a lover of them cheeky yellow minions so based on that we decided blue,green and purple with black icing was the way forward here is how we did it




 I then used disposable piping bags and then did spirals again.

 I then popped it in the oven on 190 for 35 Min's until cooked through.

Covered in jam.
I then sliced it open and sandwiched it back together with black butter icing and raspberry jam and then coated the whole thing with melted seedless jam then covered it in white royal icing.
Icing rolled.

Got it covered,

Sadly the topper broke :(

And with the remainder of the cake mix we made some cup cakes as you can see they were very colourful,
Sian loved her cake and said it was the best one she ever had.
this cake only took 4 hours to make and even tho the topper broke i still think it looked good,The topper was from Country kitchen cakes on facebook for £4 so the total for this cake was just under £10 to make.

My sisters 40th birthday cake made by Sophie & me.

Sophie gets cracking!
 Good afternoon readers,
It was my sister's 40th birthday this month and my niece Sophie wanted to bake her a special birthday cake so we set to work....



Whisking away.
 Sophie got on with beating the eggs light and fluffy while i was weighing out the rest of the ingredients and lining a 9inch cake tin making sure the paper came over the top of the tin to stop the cake from burning,

Lined &ready to go.

Slowly does it.
 Now Sophie poured the fluffy egg mix slowly into the flour/sugar mix.Once well mixed we divided the cake mix into two bowls then added yellow and orange (Bakers tool kit)

Oh pretty!




 I like using disposable piping bags as its less mess.Then we filled then and tided them using a freezer bag tie.

Ready for the oven.
We then piped spirals alternating colours then popped it in the oven on 190 for 35 Min's until cooked through,

 Once out the oven we left it to cool a little before turning it out on a cooling rack.
The inside.
 Then we cut it open and used marmalade and chocolate butter icing to sandwich it back together then covered the whole cake in the icing. 



All hidden.
 Once covered i put a ready made topper on top and smoothed it down,then Sophie set to work icing the top edge and then the bottom once it was sat on the cake board. 
 We then put wafer Daisy's all the way around and this is the result.Looks awesome as well i do hope you agree.

                It took us 5 hours from start to finish and best of all my sister LOVED it.

And so we have it my sisters surprise birthday cake she had no idea what the inside was like until she cut it and she was really happy with the top as she is dolphin mad! The topper cost just £4.00 from Country kitchen cakes on facebook and is edible too. The total cost for this cake was just under £10 to make topper included.

Ginger Bread Christmas Cookies & Jam n Lemon Tarts.

Good afternoon all,
                               My Princess Molly-Joy decided to volunteered me to make the Christmas cookies for the whole of year 2 and with only one days notice i had my work cut out.So i decided to make ginger bread cookies as there quick and simple to make one handed.




First of all i got every thing i needed in one place so i didn't have to go rummaging in my baking cupboard.



Next i made the dough using my trusty Kitchenaid. The recipe is 
800g plain flour,350g brown sugar,200g butter.2 eggs (whisked),8 tbs golden syrup,3 tsp bicarb,3 tsp ginger powder.(or 2tsp of lazy ginger)
I whizzed the butter and sugar till fluffy then added the eggs VERY slowly. (stops it curdling.. add a tbs of flour if it does to bring it back)
Add the golden syrup (pop the spoon in a mug of hot water before hand then the syrup will slide off easy) and mix well.
Next i  sieved the flour,bicarb and powdered ginger (if using lazy ginger then add just with the last bit of egg) into the butter mix and then put it on fast speed for 4/5 minutes.
Next i turned the dough out and wrapped it in clingfilm and popped it in the fridge for 20 minutes. (makes the dough easier to use) 









                             Once out the fridge i cut it in to four (easier to use) then i rolled it out on a lightly floured worktop i kept them about 2cm thick so they would be crispy on the outside and nice and soft like cake inside.I could not find my gingerbread man cutter so my reindeer's were a no go. :( Luckily i had a star,stocking,tree and bell shaped cutter to hand and got stamping (to stop it sticking "dip" the cutter in a little icing sugar)

While they were cooking (180 for 8/10 minutes) i whipped up some puff pastry and made some strawberry and lemon tarts and popped them in the oven for the same time.(i used a bit to much jam in a couple oops)but they still look yummy.

All cooked and cooled.



Once the cookies are cold i got to work decorating them i did some in a thick fondant and rolled it out on some grease proof paper using the same stamper as the cookies.I stick them on using melted jam then left them to harden.

 Stockings didn't come out right but still looked ok.






Twinkle Twinkle Little Star.
They are a deep purple in colour.
Next i dipped the remainder of the cookies into  fondant i had made by adding glycerin to normal  icing sugar,then sprinkled them with edible glitter and left them to dry.

I then added "snow" but they ran a bit but again still looked awesome,and the bells came out fab too.

So there you are my ginger bread cookies once they were dry (at stupid o'clock this morning) i packed them up ready for today's school party,(i forgot to a take a picture as i was knackered by this time)
When Princess Molly-Joy came home from school she said "Everyone loved our cookies and Josh and Mr Fox said they were 101% yummy" So i can only assume they liked them as Molly-Joy said there was none left (all 80 of them were ate).
I have warned Molly-Joy tho not to volunteer me again at short notice if was fun but stressful to do.

Princess Molly-Joy Frozen Birthday Cake

For my Princesses 8th birthday she wanted a  frozen multi coloured cake so me and my niece got to work.
Stage one cake one  piping the cake mix.

Cake two once cooked.

Cake one cooked.

Caramel butter icing and jam in the middle.

Top goes on.

Sophie making the flowers.

Then coated in royal icing and decorated Frozen style.

The inside once cut,Oh pretty dont you think?

Mmm cake.

One super happy birthday girl.

And some cupcakes with the left over cake mix.

It took us 9 hours from start to end and it was so worth it when i saw the look on Miss Molly`s face.
